Wow, I stumbled on a good one.
New addition to an old favorite recipe.

Always trying new stuff to see what works for cooking crappie fillets.
I really like the Zatarains Seasoned Fish Fri - but I wanted to kick it up a bit so I added slap ya mama, lemon garlic, and straight garlic powder. Turned out really, really good!
Damn that's tasty. cheers
I hope I remember what I did... nuts

As always, using peanut oil really hot.

I love the "slap yo mama"..fryin up some delicious flathead and its coming out nice with a little kick!! Those crappie look tasty. Gonna have to try some of that lemon garlic! food

That Tones lemon garlic is the deal. I use it on duck also, food

Other than the Zataran's how much of the other seasonings are you using ?

No idea really... just about equal parts of each i guess. cool that's why I was hoping I remembered.
I just pour out Zatarains, then add some of each and mix it.
I don't think you can mess it up really.

Same here. In fact, I cooked up a couple of crappie last night using only flour and slap ya mamma. Pan fried with olive oil. Delicious!

I have found zatarain's a bit bland , I really prefer Louisiana brand in the blue
package , no additional seasonings needed.

I originally liked Zatarains (still do) because it was subtle. It did not overpower the sweet crappie meat. And the hint of lemon is perfect.
Just wanted some more kick this time. cool

Also, forgot to mention, dipped the filets in egg/milk bath to have more seasonings stick to it.
So good.... partyon

Since I'm 71 and too old to be eating fried fish on a regular basis, I bought one of those oil less fryers and just dip the fillets in milk,egg batter, then in Zatarains then put in the "fryer". They come out much tastier than if fried in oil, healthier, too.
