wrapping a brisket in paper

Received a roll of butcher type paper designed for wrapping a brisket in while smoking. However, the paper is not wide enough to completely enclose the piece of meat, therefore, can't seal it off as with foil. Anyone else encountered this problem and how did you manage it? Thanks.

Paper is for after smoking. Wrap in unwaxed paper then overwrap in clear kitchen wrap.

Paper is for after smoking. Wrap in unwaxed paper then overwrap in clear kitchen wrap. Not according to Franklin.

Put 2 layers on bottom and wrap up over each end. Then wrap around from the side. Paper won't seal and it's not suppose to. I always use butcher paper now instead of foil. I like a crispy bark. I wrap after it gets its bark and the temp is around 165.

They paper wrap it while on the smoker? Hmmm. To what purpose? To retain some moisture and help temp climb.

OK. Cooked the brisket 10 hours. Five hours open and 5 hours wrapped in the paper. Not impressed. Has the "bark" but was not particularly tender or any more tasty than wrapping in foil. Reminded me of the days when I smoked them open the entire time. May try it again.

Check out Aaron Franklin on U Tube. He will show you everything you need to know about wrapping a brisket with paper. Just do what he does.

Try low and slow for 12 to 14 hours, then pull and wrap in unwaxed paper and clear kitchen wrap and rest it until it cools. That's how I was taught.

Smoke 5 hours at 250. Wrap in foil and cook at 250 until internal temperature reaches 195. Good to go.
