I saw a video of this guy that had a concoction mixed up and injected it every inch or two of the brisket. I read mixed reviews.

I brush it with mustard season it and smoke it for a couple of hours then wrap it in paper

I've never cooked one but I've seen others put bacon on top to keep it moist and I've seen others use fat that saved from trimming beef briskets.
