The brand that I have in my office is Eemax, it works pretty good as far as getting the water scalding hot but if you turn the cold water on to much to blend with the hot water it shuts the hot water off. So its either a cold shower or a scalding shower. ? Aha, there is a major problem. Can the thermostat be set so that the blending is unnecessary? Is that problem common to all thankless heaters? I don't know anything about other brands, this one is the only one I've ever had. It has a thermostat but it doesn't seem to help.

The emax requires a flow restricter to slow the flow of water to allow the unit to keep up with hot water. Too much water flow and you will get cold water. I would think you should still be able to mix the water as long as you had a two handle valve. I have only installed the units that would handle one fixture such as a sink. I have mixed feelings about them.

I don't think your going to find one that an RV can provide sufficient electrical service to without installing a line from wherever your staying.
