My wife and I are going on a cruise in late June and will be driving down to Galveston a day early. We will be staying at the Baymont on 63rd, what are the best producing piers and I also need pointers for setups? (i.e. bait and rigging really)

2 blocks away..The 61st street pier. If the conditions are right fantastic trout fishing at night under the lights..if not then bait on the bottom for a wide variety of species. Feel free to PM if you want additional info.
Tight lines

Hope to fish either the 61st Pier or Galveston Pier this weekend. Will post a video if we do.

Did make it to Surfside Beach and fished Jetty Park in Surfside Beach. No Bruisers but still had fun. Nice change of pace and scenery from the DFW Metroplex. Jetty Park Video.

There is 61st Street Pier and 91st Street Pier, both are nice I prefer 91st Street. You can rent rods and reels from both as well as get bait. You also can stop by bait shops on 61st street as you approach the seawall like Aunt Margies and they can hook you up with bait and litters if you need. Also would recommend getting the parking app as you will see throughout the city, I was fishing last week and received a $30.00 ticket. Enjoy your time.

Planned to fish Galveston Fishing Pier today (91st Street) but got sidetracked and went to Seawolf Park Pier instead. Fun time. No Bruisers but did get little perch and croaker to pass the time as well as spadefish(?) and a Spanish Mackerel!
Seawolf Park Video.

Did not fish Seawolf; made it to the 61st Street Fishing Pier. Caught a Spanish Mackerel there! Now back at the casa... chillin' and grillin' Pics. Will get a close out video posted later.

I guess what I am not sure about is how do you get the fish all the way up if it's a big fish?

They use either a pier net or a device that grabs your leader, then you can lift it up. In our case, the leader broke when using the device.

We do have a pier net but too bulky to load in the compact car we use for road trips. Am working on a collapsible pier net; hope to have it next time.

Also, had a question from a Reader on the black and gold reel we used on our surf casting rod... used a Penn Squall 15 Reel. Here are some videos of us using it... Videos.
