Buddy just got in from Sitka Alaska, handed me a sack of fish.. I got the Salmon down pat, but never have prepared any Halibut. Anyone have some ideas, the steaks are thick as a 2X4, solid white meat. 1 steak is big enough for 2 people. Thanks y'all... grin

Halibut has very low oil content compared to salmon, so it tends to dry out much easier. Keep this in mind for whatever cooking methods you try.

Only had halibut once as a gift from friend who caught them in Alaska. I grilled the filets in a grilling basket over charcoal with probably mesquite or pecan wood and seasoned with Tony C's and Old Bay. As I remember, they were delicious. Very white mild-tasting fish - like crappie except better.

I'd just grill it. Great fish for that. Don't over cook it and dry it out. I would think it would make a great ceviche.

It's great grilled or pan sauted in a little butter and olive oil. Needs nothing more than salt and pepper or your favorite seasoning salt. As mentioned earlier, take care not to overcook it.

My son lived in Alaska and I've had this many times. Sounds crazy but it's delicious.

some of them halibut go 150-175 lb. might have quite a set on em.
