I use cod or mahi mahi or red snapper . Salt and pepper lightly , use a cast iron skillet . Melt about 4 tablespoons of butter in the skillet (med heat) then add a spoon full of olive oil (keeps butter from burning) . cook 3-4 minutes per side or until flakey with a fork but not over done . Use whole wheat soft taco shells , throw them in the skillet for just a short time until warm . Then add the fish in a taco shell and your favorite coleslaw ontop and eat your heart out . Really a simple dish . Just don't overcook the fish , flakey but tender . While frying the fish brush some melted butter over the top of them and when you flip them butter that side too . Enjoy !!

If you want a side dish get some fresh asparagus and put on a cookie sheet , lightly brush with olive oil then salt and pepper them and roast in the oven at 375 for about 15-20 minutes . Use the thick asparagus , they taste better and don't shrink away much . you want them tender but still some crispiness to them .

^^That sounds really good! I also like a crunchy fish fillet, lettuce, maters, onions, and japs. Top it with raspberry preserves for a treat.

i like to cut the fish into 1" x 3" strips and batter and fry. cut up purple cabbage and mix up a quick Chuey's sauce to pour over the top and use soft corn tortillas. you can google "quick chuey's sauce". it's great. we use the leftover as a dip with chips. actually, i think the original sauce was a dip.

I'm not close enough to the coast to have any dorado , snapper or tuna lol. Man a fresh batch of tuna right now would be beyond awesome !!!

What about fresh water fish ?
Crappie, perch, sand bass, hybrids or stripers ?

Always use white fish for tacos . I've never had sand bass but I have eat black bass . BB could work if you have thick enough filets with no bones .

No matter if I grill or fry the fish I put shredded cabbage and jalapeno ranch on top of mine.

Throw about 8 crappie fillets in a skillet with olive oil coating the pan. Season with Old Bay and McCormick Taco seasoning. Cook about 3-4 minutes and then scramble it all up. Heat hard taco shells, put fish in add cheese if you want and then pace picante sauce on top of the cheese. Quick and easy. We love it that way.

I season fish with Zataran's blackened seasoning and cook in medium hot skillet with butter and olive oil careful not to overcook the fish. Make some coleslaw to your liking and heat up some corn tortillas. My family loves fish this way and its quick and easy.

This is excellent! I always make some filets this way. Crappie, sandbass, stripers... When I make fish tacos I make them a few different ways because there's usually a group. The best fish fry batter I've found is Uncle Bucks fish fry from Bass Pro. Hot and Spicy, Original, and Low Sodium.. They are all great. I mix the Hot and Spicy half and half for folks that don't like it too hot but still like a little spice.

Corn and flour tortillas... Cilantro, homemade guacamole, homemade salsa, sauted onions and peppers... sour cream, cheeses plus feta, Cole slaw or shredded/chopped lettuce, rice and beans optional... Delicious!
