I've never had luck with Hard 8 except for the Stephenville location. Like others have said Hutchins or 3 Stacks for that area. 1050 BBQ in Richardson has the same layout as Hard 8 and is much better in my opinion. Also if you make it to Plano, Lockhart in Downtown and Winners BBQ in East Plano is fantastic.

Last time I went there, the guy cut the burnt end off a brisket for the person in front of me, and sliced him a better cut of meat. When I asked for some brisket, he put the burnt ends on my tray. I told him I didn't want the burnt end, and he got pissed off and started being a smart@$$. When the old man ordered, he gave the burnt end to him with out charging him for it.
With service like that, I won't go back. The place sucks anyway

I had lunch at Hard 8 Stephenville Tuesday. It was the same as always, pretty good, but never the best. The sausage was freshly cooked and juicy with good flavor. The brisket is not my favorite but I always get one slice anyway. It was tender, moist and fairly lean. It just lacks the good smokey flavor I prefer due to their cooking method, it's like eating a grilled roast. The potato salad and beans were very good as well.

It is good but not great to me. Plus it is high $$$ for average BBQ.

The Hard Eight BBQ in Coppell isn't bad except for the beans. Friendly staff and pitmaster. Been there many times at around 4:30pm and has fast service.

When we have business guests from out of town we always take them to the location in Coppell.
Everyone says they really dig it. I think it's pretty good. It's no 407 but it's yummy. Very long waits during the peak times.
