anyone around here ever smoke mullet. been talking to some of the Fl. guys on PFF and they say the mullet has to come from a sandy bottom area, not mud. i'm thinking the ones at the jetties ought to be clean, huh? anyone with mullet experience? i've eaten them in Fl. and they're not too bad.

Florida mullet and Texas mullet are two completely different critters. We've got too much junk in the water. I've had some of the world's best cooks fail with Texas mullet. My aunt could make javalina tasty and was responsible for at least half of the crawfish cooked in east Texas, but even she couldn't make mullet edible.

I've eaten plenty of mullet (fried) in N. Carolina when I lived there. I mentioned on another forum long ago about getting the mullet that feeds from sandy bottoms. You don't want to get the BIG mullet at all. The ones about 12-14" will work. "You are what you eat"....that goes for mullet too. "Sandy mullet" are cleaner and meat is better. Believe me. Fried with a dash of vinegarette (sp.)...is great. I imagine smoked is good too.

Use to go to big mullet fry's all the time when I lived in Ft. Walton Beach Fla. as a kid. I thought it was pretty good back in the day. Tried a fried mullet sandwich in Pensacola a couple of years ago and wasn't all that impressed - guess I have a more refined palate now days. grin

My father-inlaw brought some back from Florida years ago. Only fish fry I ever regret being invited to. Save them for what they are good for... bait or fertilize.

Everyone says our mullet are different but my neighbor used to cast net them when we were winter fishing the deep holes in POC and his smoked mullet were absolutely fantastic. He served it sliced liked smoked trout and I think he also made a fish dip..if I remember correctly. I'd say try it. You might be surprised.
