I've eaten plenty of mullet (fried) in N. Carolina when I lived there. I mentioned on another forum long ago about getting the mullet that feeds from sandy bottoms. You don't want to get the BIG mullet at all. The ones about 12-14" will work. "You are what you eat"....that goes for mullet too. "Sandy mullet" are cleaner and meat is better. Believe me. Fried with a dash of vinegarette (sp.)...is great. I imagine smoked is good too.
