seasoned and into a zip lock with zesty italian for a day. Then onto a hot grill to medium rare.
If any left, slice super thin across the grain and make a sammich with mayo/horse radish.

Marinade in buttermilk or zesty Italian dressing. Season with Cajun seasoning and place slice of jalapeno and onion on meat and wrap with bacon. I usually place them on skewer to help hold bacon on them. Grill on hot fire to crisp the bacon. Can also be battered and deep fried.

If the meat was properly cared for after harvest, there is no need for marinades. Why in the hell would I want my backstrap steak to taste like Italian dressing?

Olive oil, sea salt, course ground black pepper over a hot mesquite fire. Rare to NO MORE than medium rare. Sometimes I bacon wrap, sometimes not.

My wife wouldn't even put red meat on her plate if it was rare to medium rare, lol. Medium is about as red as it gets for her.

Cutlets that have been tenderized. Coat with a little Worcester. Salt and pepper to taste. Direct heat at 400-425 degrees. 3-4 minutes per side. I agree there is no need for a lot of pre soaking.

Great eating.
