I found the cheese. Panela Style or Brand. It won't melt. I have trouble cutting a pocket in the cactus, so I did the best I could and layered it. Cooked it then added the sauce with 10 mins to go. Wonderful new creation and new found cheese!

What kind of cactus are you guys using for this? Looks good! . The local grocery stores have a rolling cart with the logo on it with ice laid on top with bags of cactus on top of the ice. $1.99-$2.99 a lb. I buy the whole leaves, not the sliced. I heard there are a TON of cactus varieties, they all look the same to me. The Super Mercado has them with the spines on them for cheaper, but I buy them despined.
