I found the cheese. Panela Style or Brand. It won't melt. I have trouble cutting a pocket in the cactus, so I did the best I could and layered it. Cooked it then added the sauce with 10 mins to go.

Wonderful new creation and new found cheese!

The local grocery stores have a rolling cart with the logo on it with ice laid on top with bags of cactus on top of the ice. $1.99-$2.99 a lb. I buy the whole leaves, not the sliced.

I heard there are a TON of cactus varieties, they all look the same to me.

The Super Mercado has them with the spines on them for cheaper, but I buy them despined.
