Never had Bluegill ceviche. I had Redfish ceviche and it was GREAT! thumb

i have always heard NOT to eat freshwater fish raw.

I googled it and this was an excerpt from an article I found.

"Cutting to the focus of this article, here’s a disclaimer: This is about eating raw saltwater finfish and does not include shellfish. And my first piece of unconditional advice: DO NOT EAT RAW FRESHWATER FISH. There are many known deleterious bacteria and parasites that live in fresh water and in the flesh of the denizens that swim therein."

I heard the same thing. I have had ceviche many of times with different salt water fish including Redfish and it was great. Ceviche with a box of Ritz Crackers! Oh yea. food

It isn't that freshwater fish have more parasites than salt water fish, it's that the freshwater parasites are more adapted to live on in the human body after eating them. So it's generally considered a bad idea.

I doubt the fresh water bacteria would survive the acid bath. But I don't know. Lots of folks have eaten raw fresh water fish and survived.

CORRECT! The lime juice "cooks" the fish.

I have had this, made with crappie. I could have just chewed on a lime half and would have never been able to tell the difference. barf The other two guys that were there, thought it was GREAT!! loco

I prefer the fish to be cubed into chunks a little bit thicker, so the bluegill fillets aren't exactly ideal in my book. I've eaten ceviche made from fresh caught crappie, catfish, bluegill, stripped bass. I know it's anectodal evidence, but I've never gotten sick. In the US people quite commonly use tilapia or those imported "basa" fillets, but it's usually frozen first. I would think the freezing kills the parasites and bacteria. What I'm not sure about is if the acid bath would necessarily kill those same bacteria from your fresh catch.

Commercial freezers get colder than what we can get at home. Time frozen probably helps too. The acid probably does the job for bacteria, but it's the higher organisms like worms that can survive it.

Well not exclusively Mexican, most latin-american countries have their own version which of course is "the best". Might not sound that good, but it's addictive. Essentially, you soak the fish chunks in an acid, usually lime juice. Along with that you add other flavors like onion, hot chile pepper (habanero and jalapeno for me), cilantro, cellery, tomato. Again, recipes vary and their arent' rules. Usually eaten with crackers or chips of some sort. In places like Panama you can buy this stuff in little stores in styrafoam cups to pick up along with your beers.

Fresh water parasites are much more prolific than saltwater parasites. There is a reason you don't ever, EVER, see freshwater sashimi served in a sushi restaurant. Fresh water parasites can and will penetrate the lining of your stomach if you ingest one. The whole argument that they cannot survive your stomach acid is a complete myth. The main parasite that most people contract from eating under-cooked or raw fresh water fish is the tapeworm. There are plenty of other nasty critters that can wreak havoc on you or kill you for that matter from eating any type of raw freshwater fish, including eating ceviche made from freshwater fish. The reason is because ceviche is still very much raw fish. The citrus bath does turn the meat opaque, giving it the appearance of being cooked, and it does kill some of the parasites present in raw foods that can make you sick, but the ceviche-making process will not protect you from the worst of the parasites, ranging from salmonella to parasites and worms. The best practice is to always cook freshwater fish. You may have eaten raw freshwater fish before with no ill affects but like Bear Grylls says: "You can get it right a thousand times, you only need to get it wrong once". Essentially, you're taking an enormous risk by doing this and if you do happen to ingest one of these parasites, it will be the last time you take that kind of risk, I guarantee.

Play is safe, don't take that chance. Cook everything from the freshwater... my 2 cents.
