I have found a Hobie Outback 1,400 and was wondering if that would be too much or a good price.

What year? What condition? It's worth what a person is willing to pay for it.
You seem to be all over the map with questions about what to buy. I'd suggest doing a lot of reading and research and doing some demos before spending your money.

Demo, demo, demo. Never buy a kayak without a demo first. An outback is good for some but not for everyone.

I would get one with the new seats. I don't believe the 2014 had them. Also what does it include?

I would get one with the new seats. I don't believe the 2014 had them. Also what does it include? Not only this seat issue mentioned by getbent956 but at some point just in the past model year or two, it might have been the 2015 model. Hobie made a significant change to the contour of the Outback's cockpit area. I believe Hobie made it much more fishing friendly, if you will: a flatter surface for standing, more accessibility for fishing. 30 Miles Out on YouTube, a kayak celebrity and a nice and honest guy, prefers to fish out of Outbacks over PAs owing to how super heavy and hard to tug around the latter are for guys out in the surf fishing BTB and having to carry out across wide sandy beaches. He said if he had to choose just one kayak for the way he and his wife fish, it'd be an Outback. These aren't necessarily issues for you but check out the model year compared to more recent ones to see if you like it. The price seems pretty good to me if the yak is in really good shape and has some add-ons. Brad

At $1400 for a 2014 that is a great deal! You can't find any 2011 or earlier for less than $1800.

If its a 2014 for $1400 you should jump on it! Thats cheap cheap for those.
Unless there is something wrong with it. At that price even if it has no extras your getting a deal.
