trying to find different dishes to make with all this wild hog meat, but i keep coming back to a carne guisada type meal. cubed the meat, browned it and added cumin,mexican oregano, paprika and chili powder. let that simmer while i chopped up an onion, 2 tomatoes, garlic, 1 large potato chopped and 1/2 bunch cilantro. combined everything and added 1 cup chicken stock and 1 cup water. the meat had about another cup of juice also. let it cook for 3 hrs. burned some tortillas and dove in. pretty good stuff. oh yeah, i threw in about 1/2 can of corn left over from last night. would love to hear of some more ways to use all the hog meat i've got.

Have you ever tried Japanese or Thai type curries? Not necessarily spicy, but with a lot of flavor to cover up the flavors of the meat.

never thought about Thai. good idea. did look into Jamaican. i'll let you know what i find. thanks.

a simple dish is to cube, dust with flour, fry, and toss with buffalo wing sauce. Lots of varieties of sauces available these days. my kids love the teriyaki with some sesame seeds sprinkled on em.

My wife makes Pig Bood Soup, I am not a fan but many people think it's pretty good.

i'm guessing you mean pig blood soup. that don't sound too good to me, but i'd try it if some one cooked it.
