made a 7 lb trial run on some breakfast patty sausage this morning. using 40% red deer and 60% wild pig with some bacon fat thrown in for good measure. must have used tablespoons of brown sugar instead of teaspoons. came out too sweet. glad it was a small batch. live and learn i guess. the red deer was real good in there. first time ever eating it, was given some by a friend. used Zach's old country seasoning with additional sage and brown sugar. anyone have a simple recipe?
