In relatively clear water a color scheme like Bobby Garland Blue Thunder is hard to beat.
Bobby Garland Bluegrass is a good but you are asking for one favorite. In less clear water a good place to start is black with a chartreuse tail.
A few years ago I started playing with making my own hand poured plastic baits to a small degree and I ended up with over 100 color variations. If I were to anoint one of my own creations that I haven't noticed any commercial bait company using it would be hard to do because I think pretty much everything has been done to some degree or another as far as color schemes. Probably my variation of daquiri including holographic glitter and pearl glitter may be my favorite of what I've cooked up.
