Good thing the water was clear cause I would have never noticed. I saw a crappie maybe the same or maybe different one come up to my jig strike it then in the same fraction of a second spit it out. If fishing deep how do you even notice if this is happening?

By watching the tip of your rod.

I agree with Thump. Watch your line where it enters the water, if it 'ticks', moves, or goes slack, set the hook! Good luck!

Crappie fisherman have to be line watchers. It's the reason why most of us use high vis line. When fishing deep. Sometimes you will see your line go slack or it will start moving to the side. If fishing a jig add a crappie nibble and this will make the hold the jig a few seconds longer. If your line does anything that you did not cause....set the hook.

rod choice and line make a difference too, a good sensitive rod and light braid line will help a lot

When the bite is light, I have to 2 finger the line between my thumb and index finger. It helps.
