This was so good I had to tell somebody!!...was running short on lunch options, so I grabbed a leftover sweet potato from the house this morning and took it to work...basically what happened was, I made a poor boy chicken salad...had a 5oz can of chunk chicken breast in my desk, poured it in a bowel, added two packs of tarter sauce and half a pack of crushed red pepper (left over condiments) a little sea salt...then I mixed the sweet potato in with it and mashed it all up...it was absolutely fantastic... if only I'd had some good crackers...I have made chicken salad like this many many times, but the sweet potato was a game changer.

Chicken goes extremely well with anything sweet. I've made roast chicken and sweet potatoes before and it turned out gone before the steam dissipated.

Roasted chicken pieces with sliced roasted sweet potatoes with lemon, fresh rosemary, onion, and garlic and just a hint of honey. Oh Good God in Heaven and all the little baby angels that was amazingly spectacular.

Sweet potatoes go good with just about anything, just like bacon.
