I typically use oak, apple and hickory. I have a friend who has a bradford pear that needs to be cut down. Can that be used for smoking?

If a tree produces anything edible, you can smoke with it. So, yes. Just because Bradford pears are tiny and mostly core doesn't change the fact they're still fruit trees. We had a great conversation on here a few years ago about various smoking woods.

i use pear wood to finish off a smoked meat. it's kind of weird when you split it. it looks like thorns in the middle of the wood. you start a split and then pull it apart and one pc will have a 1" or bigger thorn that pulls out of the other pc. i get my pear wood from the same guy every time, so it may just be his trees. those little pears make a great pear pie too.

Due to tannins, I would avoid oak.

Watched one of Alaska Wilderness shows on TV the other night where they were smoking salmon. I couldn't believe it when they said they used cottonwood trees to smoke their fish! Of course they don't have the options we have.

I second all of the recommendations above. In my experience mesquite and hickory have a strong smoke flavor and are OK for fish (that doesn't take long to smoke) and for finishing meats. My favorite wood for smoking is pecan. Pecan wood doesn't burn long enough for some cooking needs (like brisket) and so I may cook with something different but use pecan for the smoking part of it.

With three pecan trees on my property I do a once a year trimming and pick up scattered limbs that fall and have all of my wood for my little smoker for the whole year. I do use a few other woods like Cherry, Apple and Hickory for some things but my favorite is the Pecan and when I am doing fish or chicken I actually use a combination of the Pecan and Apple.

Pecan don't burn long enough to cook a brisket?? You people crack me up. It's all about air flow, which way the wind is blowing, etc... piece a cake to regulate.

Longeye, you are correct that for each cookout things are a little different depending on the wind and position of your cooker in relation to it, if any. Pecan will cook'em, just have to add coals a little more often in my personal experience. I figured somebody would jump me about the comment that oak and mesquite can be a little strong flavored. I meant to say when you use those woods for the actual smoking process (that uses pieces of wood) as opposed to what I call the cooking process (that uses only coals).

That said, I am no expert so enjoy your own methods and woods!

When smoking pork, try alternating pecan and hickory. Is very good on pork in my opinion.
