At one time lake fork replicas did repair work on old skin mounts. You might start there.

the only fish I have ever had mounted is a skin mount, which was done when the plastic mounts were just coming out back in the early 80's. It is holding up just fine. The fish would have died anyway. A 50 lb red fish.
You might also try Bev's Fish Creations on FM 515 out of Emory. 903-473-4529
She does really interesting work and is also the mold maker for a lot of taxidermists.
