This subject has probably been on here before. My mother made the best potato salad, but she has been gone since 1984. She used sweet pickles. My mother-in-law used to make very good potato salad & she used olives & it was delicious. She is still around, but too old to cook anymore. My wife refuses to make it. She is an excellent cook, but does not do potato salad. I plan to start making it myself. Done it a few times & something is missing. Any suggestions?

I love me some potato salad, so long as they don't over do the mustard. My Mom's recipe is awesome too, glad she passed it down to us.

I've got a few written down from my aunts. Again, I can't tell you exactly how I make mine because I learned the "dump and pour" version.

Ozell's Potato Salad.

Boiled potatoes peeled and cubed and cool.
1 cup mayonnaise
1/2 cup green peppers -- chopped
1/2 cup green onions -- chopped
1/3 cup pimientos -- chopped
1/3 cup sour pickle relish
1/2 cup sugar
1/2 cup prepared mustard
Peel and boil the potatoes. Cool and cut the potatoes. Add the other ingredients and mix thoroughly.

SHUG'S POTATO SALAD

Boiled potatoes (peeled and cubed)
5 tablespoons Miracle Whip
2 tablespoons pickle relish or finely chopped pickles (sweet, sour or dill)
2 tablespoons yellow mustard
Salt and pepper to taste
8 eggs boiled and chopped
paprika
Mix together and chill well.
Whether "Southern" or "Texas", this is the potato salad I grew up with. Miracle Whip, not mayonnaise, is a necessity. I prefer the dill pickles and I really like some chopped onion in there. Sprinkle some paprika over the top.

One important thing here....you can add anything you want but FIRST you have to use two different types of potatoes....New Potatoes and the standard Russet variety together......FACT

I'm also going to add a German potato salad recipe tomorrow. Just have to find where the book grew legs and wandered off to. It's around here somewhere.
