I have bought a few different hook sizes , but the mustad 15/0 circle hook has a vary small gap , it's hard to imagine that hooking around a jaw . Should I buy wide gap 15/0 hooks ? What's every ones favorite ?

I'm rather fond of Mustad Sea Demon circle hooks, but not sure if they're made that large. For what it's worth, the most important feature in my experience is an offset circle hook, even with a small gap.

I've had good luck with gamakatsu octopus 8/0 offset circle fishing for bull reds and have pulled many sharks to the boat with them also.

I don't target Big Reds but I have used 4/0 Trebles for many years....Carolina rigged on bottom. No problem. 30#-40# Fluro Leader Material, 30# mainline

my favorite-Owner Super Mutu, ringed if you can find them
Mustad demon galvanized (7861, I think), I see these by the box-full on guide boats.
OTI circle hooks are excellent, but rot quickly in salt environment (as designed), & not a wide variety of sizes.
Zack is right, look for a good point to shank offset, good steel, etc
