Back in the day (think '60's and '70's) that's the only way we ate fish. When I was a kid we didn't even know how to fillet a fish, it was always scale, gut and cut the head off unless it was a catfish then it was gut, skin and cut the head off, always fried whole. Dad wanted no part of wasting any meat, lol. We moved on from that process and started filleting when I was a teenager. Now I fillet every fresh water fish except the occasional rainbow trout. Some saltwater fish I leave the skin on but not always, but always filleted.
