Got plenty of fillets . And of course im gonna batter them up and fry some . Just curious on anybody else's batter or other recipes . Would like to try something different .. Ready set go !!!

I started trying to find other ways to cook catfish fillets and someone told me about this simple recipe that is my favorite when not frying them. Place the fillets in foil and add butter, Zataran's Garlic and Herb seasoning and a few dashes of your favorite Cayenne pepper sauce. You can put them in the oven but I like putting them out in my smoker with the top of the foil left open so they cook and get a little smoky flavor to them. I have also done this lately with Grouper and this weekend with Cod. I also try different changes like putting layers of onion and dill on top of the fish or mixtures of different combinations of Obie Cue's spices. This weekend on the large Cod fillets on one I used Smooth Moove and Blackening spice and covered the fillet with jalepenos. On my wifes I put Smooth Moove and a little bit of Sunshine which is kind of a lemon pepper seasoning. Cod and Grouper tasetes similar and love it when we can get it fresh locally but when my dad was still with us him and his buddy fished all the time drifting for catfish so we always had a freezer full of fillets.
