Nicely done TE.... How did you keep those fillets from falling apart? I've tried that once & it didn't look anything like those.....

Nicely done TE.... How did you keep those fillets from falling apart? I've tried that once & it didn't look anything like those..... I don't know exactly. Some did. I think those might have been the bigger ones. I use a really thin lightweight egg turner thingy (don't know what they're called) I guess I lift up the pan and gently slide it under the filets. You're right though, its tough. I'm going to try real blackened - outside with a super heated cast iron skillet - when it gets cooler. I think if I put enough butter and Paul Prudhomes blackened redfish seasoning on it, that may help hold them together. lol
