So I just got an awesome Cajun fryer and can't wait to use it! Do most folks drain the oil after every use or just leave it in the fryer and change it out after so many uses? Obviously it will be kept outside and I was not sure if the oil could just be left in it. Thanks!!

I think I would at least strain it and pour it back into the bottle it came in. A funnel makes it easy. If it gets too hot when you are cooking throw it out. If you manage to keep it below 350 you should be okay to re-use it.

i never re use the oil. it's got food particles in it. stinks. even filtered, to me it stinks.

Use peanut oil. I have reused it before. Only peanut oil though. Others will taste burnt.

If it's an R&V Works Cajun fryer or something along the same design you did good. I have the 4 gallon and drain/filter my peanut oil after 3 to 4 cooks depending on volume cooked. I leave the oil in the cooker at all times and just cover it with an old Backwoods cooker cover I have. I will use the same oil for up to a year if I don't get side tracked and burn it. Never leave the fryer dry or it will rust unless stainless steel.
NOTE:If you purchased the SS Model disregard; if not read on. The regular steel model needs to be cleaned really well with soap and hot water prior to use. Even then you will probably have discolored unusable oil after the first cook or two. Once it really clean and cured your good to go for a long period of time. You can say good BYE to throwing away expensive peanut oil after only one use.

Don is spot on I have the 8 gallon model and drain it every cook but do wipe down the inside with oil after rinsing out.I find the oil good for a least 3 to 5 cookings. Now I do strain it with a paint strainer takes a long time but worth every hour.I would like to get a smaller model for regular cooking ,I feed 80 to 100 people on mothers day every year and the rv works fryer has made it a couple hours tops to feed everyone, with Fry's hush puppies and other misc. items instead of 3 to 4 hours behind several pots.

I use cottonseed oil, it does not burn, it does not absorb "fish flavor" and I reuse it four times before replacing. I use an electric fryer that has a thermostat and the burner is above the bottom of the fryer so the cornmeal drops below it and doesn't burn. That keeps the oil good for reuse. I set the thermostat for 375 and let it reach 375 between each batch. I drain the oil into the jugs it comes in and keep them in my shop refridgerator.

On the advice of someone on here, I bought rice oil. Hard to find and expensive but it works good. A pain in the arse to drain and clean cooker each time, but we don't fry very often, so I do it.

Check the temps that various oils start smoking (get burnt). Then go get the high temp one. Peanut oil.
