I second the cottonseed oil. Great oil. I strain and re-use oil when i fry pretty much anything (that uses a significant volume) except fish. I never re-use oil used to fry fish. Just my $0.02.

Fry your French fries last. They will absorb most of the fish odor from the oil. Doesn't affect the taste of the fries.

I fry with canola oil. Can get it at HEB/Walmart for about $4/gal. In my opinion peanut oil is nothing more than a fad. We have a counter top fryer that holds a gallon of oil in the house we change the oil 2 times a year and it cooks fries/tots, fish, homemade motzerella sticks etc. on a weekly basis.

Keeping it outside is going to be the problem with the oil.

Canola oil can't get past my nose. It gags me for some reason. I will turn and leave a place if I smell it. Always used peanut oil especially for fish fry.

How can a restrant go so long with out changing the oil? I worked at a real nice one so it wasn't laziness....

I use lard and peanut oil together, but I never re-use.
