Cooked them whole today for better half, plus a few fillets just to make sure there would be enough and to have some left over. Toyed with the idea of pan frying, but decided to use the deep fryer. That is the way I have always done it, and I can control the temperature easier this way.

Lawd have mercy...why did I have to see fried gills this early and lunch is over 3 hrs away!

Thanks for the replies Banker, Laker One, and Action Jackson. Throughout the summer, I cook up a batch of sunnies almost every week, and never get tired of them. Not sure which I look forward to the most, catching them or eating them.

375 degrees. The way you put the breading on is also important. The fish Is damp when I start the process. I salt and pepper the fish, then dredge each piece in a pan with flour, then in a pan of egg wash (2 beaten eggs and 2TBS water), then in a pan of your favorite breading mix, then in the deep fryer.
