If you mount the transducer sideways on the trolling motor, will it then be a side scan image?

Side Scan is a Lowrance product and DI is Down Imaging by Humminbird.
Don't know what a Lowrance Side Scan crystal orientation is to match with a Down Scan (DSI or HDI) tilted.

If you tilt a Humminbird Down Imaging transducer 60 degrees, it will have the same coverage as a Humminbird Side Imaging pulse.

You will not get a Side Imaging view, it will still be displayed as DI.

Some of us have done the opposite and used 1/2 of a tilted Side Imaging transducer to produce sharper images for the DI view since a SI transducer's Imaging crystal is longer than the one in a DI transducer.
