I usually throw back crevalle jacks, but when I gut hook any gamefish I generally try to find a use for it. My thought was that like any oily, bloody fish, jack might be good in the smoker, and I'm pretty good at making even the least loved fish tasty.

Unfortunately, the few times I filleted jacks, they were always absolutely clogged with parasitic roundworms, coming out in thick clumps in a layer between the muscle and skin. I don't think I've ever seen so many worms in any other fish, even in bigger black drum.

Are crevalle jacks one of those fish that are basically always wormy, or is it just my bad luck?

Never tried cleaning a crevalle. I have had smoked amberjack, which was a bit strong but not too bad.

I know they are readily eaten in other countries around the Gulf and Caribbean. There are You Tube videos of people preparing and eating them as well. Too bloody for my tastes though.
