Since I mentioned it on the thanksgiving leftovers thread, I thought I might oughta post my recipe. This stuff is great when you have guests as a pound of chicken or turkey and a pound of spaghetti noodles can easily feed 6, with leftovers. Very filling and very very good.

Turkey Tetrazinni.

First, preheat oven to 350 then get a pot of water on to boil and start the spaghetti noodles. Somewhere between 12 ounces and a pound. If you have precooked turkey breast on hand, you can skip the step of cutting up three chicken breasts (about a pound total) and sauteing them until they're done.

Now, in a slightly large pot, add half an onion minced very fine, and about half a stalk of celery again minced very fine, with 2 tablespoons of butter just until the onions go clear. Add 3 more tablespoons of butter to the pan and when it melts add a quarter cup of flour. Stir that about three minutes and then add 1 and a half c. cream and a half cup of milk and stir. When it starts to thicken, add a 1 and a third cup chicken broth. When it starts to thicken up add a third cup of parmesan and take it off the heat.

pour the drained spaghetti in a large 9 x 13 cake pan, sprinkle the chicken bits over the top, pour the sauce over it all, and then give it a little bit more texture by mixing a half cup of bread crumbs mixed with a third cup of parmesan.

Pop the mess in the oven and bake for 15 minutes. If you want a little more crunch on top, turn on the broiler for 2 to 3 minutes, but I usually skip that step cause we're hungry and need food NOW.

Good good stuff... and it took me longer to type it than it usually does to make!

I made Katt's recipe yesterday. I used some smoked chicken breast left over from a beer can chicken made last week. Also added some sliced mushrooms with the chicken.

Got give credit where is due. I have made quite a few of Katt's recipes. I have yet to find one that did not deliver. Don't stop sending them Katt. You are a treasure on this forum.
