1945 Chicken Spaghetti. (Typed exactly as the book including typos)
4 pound hen. Cooked boned and skinned.
1/2 cup wesson oil
1 can pimientos
1/4 cup chopped green bell peppers
1 cup tomatoes, peeled and chopped
2 medium size onions chopped.
Salt and pepper
1 small can mushrooms
1 1/2 packages spaghetti
1 pound American cheese, grated
1/4 cup chopped parsley
Heat the oil. Add the pimientos, bell peppers, tomatoes, onions, salt, pepper, and mushrooms and cook until soft. Then add the well seasoned cooked chicken, cut in small pieces. Boil the spaghetti in salted water for 20 minutes or until it is soft. Drain and mix with the cheese (reserving 1/2 cup of the cheese), Mix the spaghetti and the chicken mixture, place in a casserole and sprinkle with cheese and parsley. Bake in a slow oven until the cheese melts. This will serve 8 - 10.
*Personal note: I have not made this. Bought the book for the sheer amusement factor many years ago. I can think of a few things I'd do differently with the recipe.. and 20 minutes to cook spaghetti??? Really????
