and killed a carp and a buffalo both about 6lbs each,and was told they taste great smoked like pork..the carp has red meat but the buffalo has white meat,similar to a white bass...i'm open to suggestions.the whole world eats these fish..why not me

Give them to whoever told you they are good to eat and tell them to "enjoy". If they don't want them, try the dogs or cats.

Just commented on this very topic in saltwater forum on hardhead catfish. Buffalo are excellent smoked. Read the part I said about the topic. I like your attitude...'Why not me?' PM me and I'll give you some recipes.

There's only one way to prepare carp. Get you a cedar board and lots of butter. Coat the cedar and the carp in butter and smoke it for a 20 minutes on the grill. Every few minutes put another layer of butter on so it'll be nice and soft. When it's done, throw the carp away and eat the cedar board.
The truth is, I've never tried either of those. But I do know good food is totally subjective. Maybe you'll like em and maybe you won't.
