Bluegill fillets baked in lemon butter

Well, I finally got around to baking bluegill fillets in lemon butter. They exceeded my expectations and I will definitely be cooking them this way often. Mixed a very small amount of fresh squeezed lemon juice (one teaspoon) in about 3/4 stick of melted butter and mopped it on the fillets after I had salted and peppered them and sprinkled on some Old Bay seasoning. Thanks Banker for telling me to only use a small amount of lemon juice. As you said, only enough is needed to give it a little flavor.

Thanks for the reply crope1. A good cold beer has always gone well for me with Mexican food, but not so much for fish. Guess I'm still in the training stage, huh?

Thanks for the reply Gitter Done. All of you guys on the Bluegill/Sunfish forum have greatly improved my sunfish catching and cooking during the past few years. This is a great sport that we are blessed to enjoy.
