They are excellent sport, and Drum are delicious. I find it comparable to Redfish, the drum's saltwater cousin, and consider it delicious grilled, broiled, baked, fried, smoked or made into chowder or bouillabaisse. IMPORTANT:***THIS IS THE KEY*** Place your catch on ice, or in ice cold water immediately. If you put Drum in a wire basket or on a stringer, they quickly die, and the flesh rapidly spoils.

I use to hate these fish because I was always told they were trash fish! Real name is Freshwater Drum. Gaspergou, Grunt, Sheephead, Croaker, Thunderpumper are some of the regional names that are assigned to these fish.

This fish is way underrated as tablefare. Most of my life I've heard they were no good to eat. And then I tried some a relative had cooked. Whoever started the rumer "They are no good to eat" kept alot of people from enjoying some fine dining. Basically Drum are freshwater Redfish.
