Had the best Salmon ever. Bought a new digital electric smoker recently and have been getting used to it. With some tips from Tritonman I did my best brisket ever a couple of weeks ago. This weekend was for fish and it turned out awesome.
4 salmon fillets. Brined for 2 hours in Brown sugar, maple syrup, beer, salt, pepper and Zataran Garlic and Herb seasoning.
Coated two of the fillets in maple syrup. Put dry rub on two consisting of Salt, Pepper, Garlic and Herb seasoning and ObieCue's Sweeeet Moooove spice (one of my all around favorite spices).
Put in the smoker skin side down at 225 for two hours using the marinade juices in my water pan and using 3/4 Apple wood chips to 1/4 Pecan wood chips.
Me and the wife love all kinds of fish but I am not the best at cooking or grilling fish so I was crossing my fingers on these.
Pulled them out after 2 hours and they turned out perfect. I preferred the one's with the added rub, my wife just poured a little more maple syrup over hers. They glazed up perfect and tasted awesome.
I love just regular grilling and smoking with wood but this new Masterbuilt digital smoker is really awesome and easy to use with a container you put wood chips in without even opening the door to the unit.

Electric smokers are the absolute best. We've been smoking salmon on a regular basis. Your recipe sounds delicious. I tend to be lazy, and let the smoke provide all the flavor with no other prep. Just throw them in, cook at 250 for an hour.

We've also smoked casserole dishes of macaroni and cheese- another winner. Best of luck experimenting.

That is really similar. I think the only change I will make is to let my fish brine overnight instead of just a couple of hours.
