These are eggs from two different fish I caught yesterday. Why the difference in color?

The top eggs are further developed and close to spawn time. The bottom eggs need a another 2-3 weeks. When the eggs get close to laying time, they get almost clear and lose the blood lines in the sac. Once they are really close, the eggs will separate individually and not hold together in a clump.

Gman How do you go about that? I tried it once. Dredged in flour, egg wash and then breadcrumbs. Put it in the grease and it wouldn't stop popping from the water being released. Eventually it broke open in the grease and it was a mess. Should I pan fry it in just a little oil?
