Removing outboard and controls

I've swapped outboards before so getting that off isn't hard at all, but how big a pain is it to get all the controls out? Do I have to cut and label wires going to the tach and such? Thanks

I would not cut wires, label them and remove from gauges as needed

It is on an old pantera 2 with the digital dash, will they still be seperated like analog gauges?
