We take the red line out and wash until the fillets are as white as they can get. You can cook them any way you like to eat fish, fried, baked, grilled on the half shell...

What Kody said. Be sure there are no pieces of the backbone in the filet, when cooking they turn into a white slime that tastes real strong and bad. They are great baked, fried, grilled and some brave people make ceviche with them. Its one of my favorite fish to eat.

what Kody says, plus I soak em in milk overnight. They grill real nice w/ butter-lemon pepper and cilantro.
