My grandmother had a great one but it was in her head. Somehow her sausage always came out the same. I think she did it by taste. I made 50lbs this past weekend but I made it with a purchased blend. I have some casings left over and want to try a small batch with different spices and a coarser grind. Does anyone have a good homemade seasoning recipe?

Fishers Meat Market in Muenster makes a great sausage like that. Our church buys them and sells them after grilling as a Men's Club project. I have no idea how they are seasoned, but they are among the best I've tasted. We freeze them and heat them up for breakfast or grill some more to eat with steaks, etc. Perhaps someone up that way may have a clue as to their secret.
