My grandmother had a great one but it was in her head. Somehow her sausage always came out the same. I think she did it by taste. I made 50lbs this past weekend but I made it with a purchased blend. I have some casings left over and want to try a small batch with different spices and a coarser grind. Does anyone have a good homemade seasoning recipe?
