I made this today and thought I would post it on the forum. A friend that lived on
Lake Corpus Christi use to make this and I got the recipe from him. This was his
favorite thing to do with white bass. I have made it with all of the fish species
listed here.


18 oz bite sized fish cubes about 1/2 to 3/4 inch (perch, crappie, black bass, white bass, striper, or tilapia)
cup chopped vidalia sweet onion
cup chopped carrots
cup chopped celery
1 cup chopped red potato
2 heaping tbsp chopped bell pepper
2 cups chicken stock
2 tsp Uncle Chris Steak Seasoning
tsp black pepper
3 tbsp butter
1 cup heavy cream

Saut potato, carrots, onions, bell pepper, and celery in the butter until potatoes are just tender. Add Chicken stock, seasonings, and heat to just bubbling. (warm cream in microwave) Add fish and let cook for 4 minutes, folding a couple times while cooking. Add the warm cream and stir in, and then serve chowder immediately.

Serves 3-4

That's sounds tasty gunna have to try that one where do u git uncle Chris steak seasoning is it got special seasonings?

HEB, Albertsons, Kroger should all have it. It's a Bolner's Fiesta Brand spice product.

I use UCSS on a lot of things. Steaks, pork chops, sauted fish. I would hate to think I would
ever be without it.

I remember when this stuff first came out about 10 years ago. It became a cult item
and the grocery stores couldn't keep it in stock. I remember having to buy some of Ebay !! grin

I added a chopped jalapeno, some crushed red pepper, minced garlic, and a handful of cooked shrimp along with some hot sauce right before eating. Best chowder I have ever had.

I like the idea of jalapeos and shrimp added. Gonna make my next batch like that !

Just had another brain spark. Wonder if it would be improved or not with some crumbled, crispy bacon. Bacon is good in damn near everything.
Forgot to mention too, I didn't have the prescribed Uncle Chris seasoning so I used Old Bay and added salt.

Great recipe. I was short on fish, since I haven't had time to go fishing, but I had a can of clams and a pound or so of nice shrimp which I used. I only had half the creme needed so I added a can of cream of chicken soup for richness. To quote my wife (toughest critic) "utterly delicious". Thanks for the recipe.
