I've heard that saltwater reels can be used in freshwater, but is this true? I'm looking for a nice reel that can hold up to 20# mono line, but freshwater reels just don't seem to have that option... unlike saltwater.

Usually this question is asked in the other direction (freshwater tackle used in saltwater). Absolutely no problem with using a saltwater reel for freshwater fishing. Less maintenance, less corrosion, etc.

If you're fishing for stripers/hybrids or big catfish, an Ambassadeur 7000 series reel would be plenty big and hold lots of 20# mono.

Won't work. The fitgidigit needs salt in order to work.

I perfer the 6000 series. The 7s are a little big.
