Are they good for structures? What kind are good/bad and how to you sink them?

They will not last as long as fresh cedars in the lake. I have used them, they will be there about a year, just anchor them down with cinder blocks.
Fresh cut is better for the effort.

In my opinion Christmas trees are not very good for crappie. They will work don't get me wrong but they are not the best option. Something like willow or bamboo will hold more fish for longer.

I use them all the time. Some of my best spots are xmas tree condos. I have some going on 4 years old now and still going strong.

If you need Christmas Trees, Home Depot stores in the DFW area have recycle areas where trees are dropped off, They will be there for the taking until Jan. 7th. Help yourself.

How many trees does it take to make a good spot I would say 5 as a minimum for random size Christmas trees, 10 would be ideal. Also something to keep in mind, any hard wood tree is a lot easier to see/find on side imaging than bamboo. Bamboo being hollow looks like ghosts on SI.

We got a big pile of green christmas trees here at the Home Depot on Josey and Forest. If anyone needs some, come get em. On the 7th of this month, the City of Dallas is gonna come by and pick em up and take em to their mulch makers! They are there for the taking, come get em! I have used christmas trees for years to set out for crappie and they work great. As far as how many, i have used as few as 1 in a tight area, and as many as 4 in a bigger area. I weight them down with cinder blocks, at the trunk, and lower them so they stand upright, once that cinder block settles into the bottom, it's not going anywhere.
Had the brickyard on Bachman wall to wall with christmas trees once upon a time, and the crappie fishing in winter was phenomenal. Then the Skul crew coaches found out about em, and grapple hook pulled em out. Said they were a hazard to their rowing skulls. Funny how a tree 12 ft below the surface can damage one of those aluminum or fiberglass tubes.
Nice guys they are!
