Keep your guard up about the Angus. I always assumed it was really Angus, but after talking to a friend last week who runs a feedlot and raises cattle (Vet degree from A&M), I have doubts. Apparently the "law" says to be called "Angus", it only has to be from a "black" animal, which includes other types of cattle. He said, the consumer has no way of knowing if it is really Angus or not. Also said Nolan Ryan stuff is the worst.

I'm Nolan fan but I agree I've never been happy with his beef. Always tough and lacks marbling for flavor.
