I just ordered the Humminbird Helix 5 Sonar/GPS unit from Hummibird online store.
My question is this:
Since I will be fishing a private uncharted lake will I be able to use the GPS to mark waypoints and what will I actually see on the screen since there is no Hot map etc for this private lake.

You will see the lake. It will not show contour. Yes you can mark a way-point.

This lake has man made structure, boulders, etc. designed by Bill Dance
I have caught a lot of fish but fishing blind

Fine someone with an Onix so you can do autochart live. Then you will have a custom made lake map.
