I cut it into one 1" x 1/4" strips and marinate overnight in Dale's or just soy sauce if no Dale's. Then smoke it for a couple of hours with pecan or mesquite to get some smoke flavor in it. Then sprinkle with Greek Seasoning and put on a dehydrator until dried out and chewy in texture. Vacuum pack in small sized packages and keep in freezer.

Best deer jerky I ever made and I have made a lot!!!

2-3lbs thin sliced venison
2/3 cup Dales (or Kroger brand) liquid steak seasoning
1 tp worchestshire or however u spell it lol
3 tp liquid smoke
2 tp coarse ground pepper ( I normally add some fresh cracked pepper)
1/2 tp salt
1/2 tp garlic powder
1-2 tablespoons hot sauce (Tabasco/Louisiana hot sauce)
Marinate overnight then dehydrate till done

Been looking all over for this recipe. This is some of the best jerky I've had and I begged the lady for her recipe. I had stuffed it in a book and then couldn't find it. Just found it this morning. It works wonderfully with venison. Made it a few times.

I'm down with fishslime on the Greek seasonings. Looks like a lot of good recipes here. One thing that I like to do is grind my venison in a grinder through a larger (coarse) grind and then pick your liquid marinade of choice. If you don't already have a 'jerky gun' or 'jerky cannon' depending on how much you have then that would be a good purchase. You'll need to put the extruded jerky from the cannon on aluminum foil before smoking. I have found that getting different salt/spices of different flavors is fun and if you buy somewhere where they sell in bulk you can get the amount you want. (Ex. I LOVE Smoked Alderwood salt purchased for $.98 and mesquite chips for smoking) Poke holes in the foil and let the juices run. Turn 2-3 times while smoking. Key: if you grind your own...add bacon or some fat that will easily render and congeal holding that lean venison today. -- ONly drawback to ground instead of sliced is that you eat them as fast as you would candy! bolt So slow down and enjoy! taz
