I'm going to lightly grill some large portabella mushrooms .
I'll then scrape out the insides and mix them with avocado , onion , tomatoe , cilantro and lime .
I'll then fill the portabello caps with the guacamole , cover with cheese and broil until the cheese is slightly melted .
Thoughts ?

Thinking about it, Oaxaca would be better... Grate it pretty fine. Swiss could work too but not as well. Fontina is a spectacular melting cheese and might work.

Thinking about it, Oaxaca would be better... Grate it pretty fine. Swiss could work too but not as well. Fontina is a spectacular melting cheese and might work. Dang , didn't even think of Oaxaca ( more of a sharp cheddar man ) . Guess I need to go get some more 'shrooms for the second course .

I have some 3000 day aged cheddar in the fridge right now. I'm a sucker for good sharp cheddar. Love cheese in general. That said, cheddar is too strong for the flavors and would overpower the dish. You want a mild white melting cheese to complement the mushroom and avocado. Oh darn! I'm just twisting your arms and forcing you to try it again. Let us know how it turns out. Sounds like a good idea.

Sounds like a good idea. Cheddar was too much for the guac . I've done this with hamburger/onion/hot pepper/ cheddar and it worked . I didn't make it to the grocery store so I tried parmesan and it complimented the guacamole ( I used a lot of 'maters and more basil than cilantro ) nicely .

Sorry I'm too lazy to take pics and post 'em on Photoshop but I bought some Oaxacan cheese today and used it on the Portabello/ guac combo . It works .

Brush them with olive oil prior to putting them on the grill and Gruyure is great on them.
