Caught some tilapia for the first time do you have to cut the red out and some fillets are white yet some of the bigger ones are cream colored is there a taste differance

The red part may taste stronger. Never have caught any fresh.

Ohh sprinkle with garlic powder on each side and bake at 350 for 14 minutes filliping once at 7 minutes. My favorite make it at least twice a week for my family.

I put some in an aluminum pan with a little butter and misc spices on the smoker the other day. turned out pretty well.
