I know there's more complicated pie recipes out there, but this has been the simplest and best I've found so far.
1 15 oz can pumpkin 1 14 oz can sweetened condensed milk. 2 eggs 2 teaspoons pumpkin pie spice 1/2 teaspoon salt
Beat all ingredients together and bake at 425 for 15 minutes then 350 degrees for 35 - 40 minutes.

Made 3 pies with Carnation milk and one with the Eagle Brand.....omg!! No comparison. The sweet condensed milk one was amazing!!

Made this recipe today for the first time.
Ingredients 1 1/2 cups mashed sweet potatoes 3/4 cup sugar 1/2 tsp salt 1 tsp cinnamon 1/2 tsp ginger 1/2 tsp nutmeg 1/4 tsp cloves 2 slightly beaten eggs 1 1/4 cups whole milk 1 (6 oz.) can evaporated milk 1 (9 inch) unbaked pastry shell
Directions
Thoroughly mix sweet potato with the sugar, salt, and spices.
Blend in eggs, milk, and evaporated milk.
Pour into an unbaked pastry shell (crimp edges high).
Bake in a hot oven 400 degrees for 50 minutes or an inserted knife comes out clean. Cool before serving.
It has good flavor ~ a bit stronger than we normally make it.

Made 4 pies for today. Went by a pumpkin patch that closed up and they were giving away pumpkins. Scored a bunch! Had everything in house except for enough eggs. Well of course, I had to get some "Cool Whip" as well......
