THE Hump-back blue, high fin blue, hi-fin blue, Mississippi white catfish, blues. JUST NAMES THAT BLUES ARE CALLED. PEOPLE THAT I HAVE TALKED TO. THEY CALL THE SMALL BLUES HI- FIN OR HIGH FIN BLUES. BUT THE BIG ONES ARE AWARDED THE AGE OLD NAME BLUE OR BIG BLUE.

"I get guys in my boat pretty often who asked me: "are we going to catch blues or high fins today?" I always answer tha' same.....YES! lol Great question Nate....2-5lbs is perfect eating. (2-5 year old fish). Just like cows, u don't want to eat a 20 year old.

Hi fin blue comes from a strain of catfish named by D & B Fish Farm of Crocket Tx., they have since gone out of business. Overton Fisheries produces the strain now. Check out Overtonfishieries.com.

just adding to the consensus - i only keep 4 to 10 pounders and pan fry them with blackening seasoning...any bigger i release to see how big they can get...and re-catch them...

Too big for the electric knife to easily cut thru the rib bones it goes back. Too small to get a good filet with the electric knife it goes back, usually anything under 14".

blues taste good as big as you can catch em. But channels are better
