THE Hump-back blue, high fin blue, hi-fin blue, Mississippi white catfish, blues. JUST NAMES THAT BLUES ARE CALLED. PEOPLE THAT I HAVE TALKED TO. THEY CALL THE SMALL BLUES HI- FIN OR HIGH FIN BLUES. BUT THE BIG ONES ARE AWARDED THE AGE OLD NAME BLUE OR BIG BLUE.

Great question Nate....2-5lbs is perfect eating. (2-5 year old fish). Just like cows, u don't want to eat a 20 year old.

just adding to the consensus - i only keep 4 to 10 pounders and pan fry them with blackening seasoning...any bigger i release to see how big they can get...and re-catch them...
